CHICKEN SKEWERS

SERVES 4-6

INGREDIENTS

500 g Chicken breast fillets

Peppers

Mushrooms

Courgettes

(Or other vegetables of choice)

Yoghurt marinade

250 ml plain yoghurt

30 ml olive oil

1 garlic clove, crushed

1 lemon, zest and juice

1 Red Chili, chopped (Remove the seeds if you prefer it less hot)

1 cup Fresh coriander leaves, chopped (to taste)

1 cup Fresh mint leaves, chopped (to taste)

Salt & ground black pepper to taste

METHOD

  • Cut the chicken breasts into cubes (approximately 3×3 cm) and place in a shallow dish
  • Mix all the yoghurt marinade ingredients together and season with salt & pepper
  • Cover the chicken with the yoghurt marinade and leave overnight
  • Soak the skewer sticks in water. When ready to barbeque, thread the chicken unto the skewers
  • Alternate peppers, mushrooms, courgettes or vegetables between chicken pieces for colour and variety
  • Braai the skewers over hot coals, about 4 – 5 minutes each side until cooke

It can be served with a tomato and onion sambal or a tzatziki
